Overview
The Chef de Partie will assist the head chef and sous chef to ensure food preparation, production and service are carried out to high standards and in compliance with HACCP and food hygiene regulations.
Responsibilities
* Arrive promptly on duty in a full, clean and presentable uniform in accordance with company grooming policy.
* Maintain high levels of personal and kitchen hygiene; comply with HACCP requirements.
* Ensure uniform and personal hygiene standards are maintained in the kitchen at all times.
* Assist in ensuring purchased foods meet agreed standards.
* Assist in training staff to the agreed standard.
* Assist the Head Chef in preparing and compiling menus for daily business and functions.
* Adhere to cleaning schedules and check hygiene daily.
* Comply with company regulations regarding Fire, Health and Safety, Hygiene, Food Hygiene, Customer Care and Security.
* Monitor dishes prepared in the kitchen to ensure they conform to agreed standards prior to food service.
* Carry out ordering duties as required and manage delivery intake of produce.
* Adhere to the company's Code of Conduct and health and safety statements.
* Ensure work areas are clean, safe and tidy at all times and report maintenance issues to management.
* All staff are expected to participate in training and communications meetings as advised.
