Trinity Care, a leading nursing home group, is currently recruiting a full-time Chef.
Elm Green is a homely Nursing Home based on Dunsink Lane, Castleknock, Dublin 15. We are looking for an experienced Chef to join our dynamic team. At Elm Green, we place our Residents at the heart of every decision we make.
Key Responsibilities:
* Produce and present food to high standards and specifications, utilizing all resources effectively and efficiently.
* Ensure full compliance with all aspects of the H.A.C.C.P. system within Elm Green Nursing Home, implementing new developments and recommendations as required.
Key Accountabilities:
* Prepare both raw and cooked food.
* Cook and present food according to specific dietary requirements.
* Decant, portion, and pack raw and cooked food.
* Manage food costs, disposables, chemicals, ordering, stock rotation, and minimize wastage.
* Label, chill, and store food following Food Safety Policy.
* Communicate regularly with Residents, adhere to their food plans, and address their needs.
* Keep D.O.N. and Group Catering Manager informed of issues promptly.
* Prepare a minimum of three 4-week cycle menus and allergen listings annually, adhering to Nutritionist reports.
* Regenerate and serve food.
* Maintain up-to-date and accurate H.A.C.C.P. records, training, induction, payroll, and additional hours on T.M.S.
* Maintain cleanliness and order in your area to the highest standards.
* Use materials and equipment efficiently and economically.
* Adhere to specifications, standards, and procedures at work.
Additional Key Accountabilities:
* Practice hygiene, cook-chill, health, and safety procedures consistently.
* Report mechanical defects and repair needs.
* Ensure maximum security of your area and its equipment and supplies.
* Manage and develop your team effectively.
* Report accidents, fire, stock loss, damage, unfit food, and take appropriate actions.
* Assist staff with portion sizes in packing and plating areas.
* Conduct monthly stocktaking and prepare stock reports.
* Check the quality of received goods as per specifications.
* Liaise with user groups on menu compilation and service provision.
* Participate in training courses as required.
* Stay updated on industry developments and assist in their implementation.
* Aim for 'best in class' results in internal and external audits.
* Develop skills and lead the Kitchen Team.
* Perform any other duties assigned by the Group Catering Manager.
