We have been granted the Good Food Ireland accreditation and working alongside our head chef, you will help us achieve more recognition and accreditation using local and seasonal ingredients. We are looking for a senior sous chef who will predominately oversee our busy banqueting department and also cover senior chefs' off days. You will help manage the daily kitchen activities including preparing various dishes and foods, overseeing staff, aiding with menu preparation, ensuring food quality and freshness and monitoring HACCP, ordering and stocking.
Working in a safe and responsible manner with recognised techniques, we are looking for a Snr Sous chef all-rounder with a minimum 3 years' experience in a similar role who has both banqueting experience with large functions up to 450pax and restaurant fine dining experience.
Skills:
* Provides the highest food quality consistent with cost control and profitability margins to maximise guest satisfaction and food profitability
* Ensures that proper safety, hygiene, and sanitation practices are followed
* Utilises leadership skills and motivation to maximise team member productivity and satisfaction
* Develops and recommends appropriate training and development to meet Hotel and departmental needs
* People developer/exporter
Requirements:
* A proven track record in a similar role within a quality environment and to be able to demonstrate excellent standards and team member supervision
* Commercially aware
* Driven and ambitious to inspire the team to consistently deliver and exceed service standards
* Clear thinker with excellent communication and creative abilities

Payment A full time role, starting salary of €40k - €45k (depending on experience) per annum based on 39-hour week.
