Junior Sous Chef REPORTING TO: Sous Chef, Senior Kitchen Management MAIN PURPOSE OF THE JOB:Plan, prep, set up and provide quality service in all areas of food production for menu items and specials in the designated outlets in accordance with standards and plating guide specifications. Maintain organization, cleanliness and sanitation of work areas and equipment. MAIN DUTIES AND RESPONSIBILITIES Maintain and strictly abide by state food safety/health regulations and hotel requirements. Maintain complete knowledge of correct maintenance and use of equipment; use equipment and tools only as intended, properly and safely. Maintain complete knowledge of and comply with all departmental/hotel policies and procedures. Meet with Sous Chef/Executive Chef to review assignments, anticipated business levels, changes and other information pertinent to the job performance. Prepare and assign production and prep work for Line Chefs to complete; review priorities. Communicate additions or changes to the assignments as they arise throughout the shift. Identify situations, which compromise the department's standards and delegate these tasks. Ensure that opening shift completes start up of kitchen line and designated prep work according to department procedures. Prepare all menu items following recipes and yield guides, according to department standards. Monitor performance of assigned staff and ensure all procedures all completed to the department standards; rectify deficiencies with respective personnel. Assist Line Chefs wherever required to ensure optimum service to guests. Who are we?
