Responsibilities:
* Lead and inspire the kitchen team, overseeing all aspects of kitchen operations and performance.
* Introduce new culinary techniques, guiding the team in meal preparation, creation, plating, and delivery.
* Manage food GP achievement and ensure menus meet desired GP levels.
* Oversee stock receipt, checking against invoices, and proper rotation.
* Innovate with new product ideas, promoting local ingredients and suppliers where possible.
* Maintain a safe and secure environment for guests, staff, and visitors.
* Operate and maintain machinery in line with instructions and cleanliness standards.
* Promote hygiene in food preparation according to company policies and legal requirements.
* Ensure cleanliness of food prep areas before, during, and after service.
* Handle and store cleaning equipment per COSHH instructions.
* Prepare food hygienically, paying attention to Critical Control Points.
* Conduct temperature checks on refrigeration units and record results.
* Identify and address food quality issues promptly.
* Order all fresh produce and dry goods for the kitchen.
* Store food correctly at safe temperatures, adhering to hygiene legislation.
* Maintain storage areas' temperature, ventilation, and cleanliness.
* Store food items under appropriate conditions.
* Handle and store knives safely according to training.
* Foster effective working relationships with colleagues and management.
