Dromoland Castle Resort is seeking an experienced and motivated
Assistant Restaurant Manager
to support the day-to-day leadership and operational excellence of our Food & Beverage offering within the Castle.
This is a hands-on operational role, supporting multiple outlets and working closely with senior F&B leadership to deliver exceptional guest experiences, strong team engagement, and well-organised, efficient service operations.
Key Operational Responsibilities:
* Provide hands-on management and floor leadership across multiple F&B outlets, including restaurants, bars, room service, private dining, and events
* Ensure all Food & Beverage outlets operate smoothly, consistently, and in line with agreed service standards
* Plan and prepare for daily operations and events, including staffing levels, function sheets, and service requirements
* Manage effective rostering to meet business needs while controlling payroll and labour costs
* Lead, motivate, and support the team to deliver high standards of service excellence
* Create a positive, professional, and engaging working environment aligned with the Dromoland Castle Manifesto
* Improve organisational structure, communication, and operational efficiency across the department
People Leadership & Development:
* Lead and support F&B team members through coaching, training, and performance management
* Assist with recruitment activities, including interviews for restaurant, room service, and bar teams
* Support onboarding, induction, and orientation of new team members
* Coordinate training and development initiatives in partnership with HR and senior management
* Support performance reviews, probation assessments, development plans, and succession planning
* Promote a culture of learning, engagement, and career development
Administration & Systems:
* Support the development and implementation of the F&B strategic plan alongside senior management
* Manage and oversee Timepoint systems, including rostering, absence management, payroll accuracy, and reporting
* Monitor and address daily payroll or system anomalies
* Ensure accurate reporting on labour, training, and departmental performance
Guest Experience & Quality Standards:
* Monitor and respond to guest feedback, sharing insights with the team and driving continuous improvement
* Ensure menus and service practices comply with all relevant legislation, including allergens and licensing
* Deliver consistently high standards of personalised guest care, professionalism, and hospitality
Professional & Compliance Responsibilities:
* Uphold the values, ethos, and standards of Dromoland Castle Resort, Legend, and Preferred Hotels of the World
* Ensure compliance with company policies, employment legislation, and all Health & Safety, Fire Safety, Food Safety, HACCP, and licensing requirements
* Lead by example, demonstrating professionalism, respect, and pride in the Dromoland Estate
* Promote a strong safety culture and maintain a safe working environment at all times
The Ideal Candidate:
* Previous experience in a supervisory or assistant management role within Food & Beverage or hospitality
* Strong organisational, communication, and leadership skills
* Hands-on, service-focused approach with attention to detail
* Confident working with rostering, labour control, and operational systems
* Passion for guest experience, team development, and high service standards
* Must have the legal right to work and reside in Ireland
