You will be required to demonstrate your experience, your passion for food, your food knowledge and cooking skills. You will have the opportunity to develop your skills. This is a great opportunity to grow & develop a career.You will be reporting directly to a Stables Brassetie and The Ring of Kerry (Nua Vista Restaurant) Head Chef.RoleThe objective of your role as Sous Chef in the ROK kitchen is to consistently manage and develop further the following areas:HACCP/Kitchen Hygiene /Uniform, and staff presentation.Purchasing, food quality and the sourcing of local producesFood production.People management, development, and retention.Food GP's.Labour CostsFood Service.Guest satisfaction – comment cards/trip advisorInvolvement in promotional eventsThis is a hands-on role, and you are required to take full responsibility for the process, procedure, system and service control and the continuous quality improvement in food quality, menu type while maintaining the cost and expenditure budgets. You are responsible for ensuring the ROK kitchen is consistently fully compliant with Health and Safety and the HACCP regulations.You are responsible for organising the efficient operation of all food in the ROK outlet and assist in the effective administration of the this outlet.All applicants must demonstrate PREVIOUS COOKING EXPERIENCE IN A MEDITERRANEAN RESTAURANT.This is a full-time role which includes weekends and evening shifts.Sheen Falls Lodge and Ring of Kerry Golf is an equal opportunity employer committed to hiring a diverse workforce and sustaining an inclusive culture.
