Key Responsibilities: Oversee the entire kitchen operation, ensuring consistency in quality, hygiene, and presentation Lead, manage and inspire a team of chefs and kitchen staff Design seasonal la carte and event menus that reflect creativity and customer preferences Maintain strict control over food cost, stock, waste management, and portion sizes Ensure compliance with all food safety and HACCP standards Work closely with the General Manager and F&B team to enhance guest satisfaction Train and mentor junior kitchen staff, ensuring a high-performance kitchen environment Monitor supplier deliveries and maintain strong supplier relationships Oversee kitchen rotas and schedules to meet business demands efficiently Candidate Requirements: Minimum 35 years of proven experience as a Head Chef in a hotel, resort, or fine-dining restaurant Culinary qualifications (e.g., professional chef diploma or equivalent) Strong understanding of Irish and international cuisine trends Exceptional leadership, organizational, and time-management skills Excellent communication and team-building abilities In-depth knowledge of food safety and HACCP compliance Ability to work under pressure and manage high-volume service when required
