The kitchen plays a central role in delivering a memorable guest experience that reflects both place and provenance.Role OverviewWe are seeking a talented and motivatedSous Chefto join our culinary team. The successful candidate will support the Head Chef in delivering consistently high standards of cuisine aligned with Michelin-level expectations. This role requires technical skill, leadership ability, creativity, and a passion for using the finest local ingredients.Key ResponsibilitiesKitchen OperationsAssist the Head Chef in the day-to-day running of the kitchenEnsure all dishes are prepared and presented to the highest standardMaintain consistency, quality, and attention to detail across all servicesTake responsibility for kitchen operations in the absence of the Head ChefMenu Development & Food QualityContribute to menu planning and development, with a focus on seasonal and local produce from our Kitchen GardenUphold the culinary philosophy and standards expected of a Michelin Key propertyMonitor food quality at all stages of preparation and serviceTeam Leadership & TrainingSupervise, mentor, and motivate junior kitchen staffSupport training and development of commis and chef de partie team membersFoster a positive, professional, and collaborative kitchen cultureHealth, Safety & ComplianceEnsure full compliance with HACCP, food safety, and hygiene regulationsMaintain a clean, organised, and efficient kitchen environmentMonitor stock rotation, storage, and waste reductionStock & Cost ControlAssist with ordering, stock control, and supplier liaisonHelp manage food costs while maintaining quality and sustainability standardsCandidate ProfileEssential RequirementsProven experience as a Sous Chef or strong Chef de Partie in a high-end or fine dining kitchenStrong classical culinary skills with modern influencesExperience working with fresh, seasonal, and locally sourced ingredientsExcellent organisational and leadership skillsStrong knowledge of food safety and HACCPDesirableExperience in Michelin/Rosette recognised or equivalent luxury hospitality environmentsA passion for Irish produce and regional cuisineWhat We OfferOpportunity to work in a Michelin Key hotel with a strong culinary reputationA supportive and professional kitchen environmentCompetitive salary commensurate with experienceCareer development and progression opportunitiesThe chance to live and work in the unique landscape of the Burren
