Job Title: Culinary Operations Manager

Overview:
Trinity Care, a leading nursing home group, is currently recruiting a Floater Chef - Leinster Area. This role offers an exciting opportunity for the right candidate to showcase their culinary skills and expertise in food production and presentation.

Responsibilities:
* To produce and present food to agreed high standards and specifications, utilizing resources efficiently.
* To be fully responsible for ensuring compliance with H.A.C.C.P. system within Nursing Homes, implementing new developments and recommendations as required.

Key Accountabilities:
1. Preparation of raw and cooked food.
2. Cooking and presentation of food according to specific dietary requirements.
3. Food costs, disposable, and chemical costs, ordering, stock rotation, and allocation of all foodstuffs and D&C.
4. Minimum wastage.
5. Labelling, chilling, and storage of food according to Food Safety Policy.
6. Communicating regularly with Residents, adhering to their specific food plans, and addressing their needs as required.
7. Informing D.O.N. and Group Catering Manager of any issues in a timely manner.
8. Preparing minimum three 4-week cycle menus and allergen listings per year.
9. Adhering to Nutritionists report.
10. Regeneration and service of food.
11. Up-to-date and accurate recording of H.A.C.C.P. records, training, and induction.
12. Ensuring efficient and economical use of materials and equipment.
13. Practicing hygiene, cook-chill, and health and safety procedures consistently.
14. Reporting mechanical defects and needs for repairs.
15. Maintaining maximum security of assigned area and equipment.
16. Effectively managing and developing Team.
17. Providing assistance and advice to staff on portion size.
18. Monthly stocktaking and preparation of monthly CPL and stock reports.
19. Checking quality of goods received as per specification.
20. Liaising with user groups on menu compilations and provision of services.
21. Participating in training courses as required.
22. Awareness of modern industry developments and assisting in their introduction where necessary.
23. Achieving consistent best results in internal Quarterly Audits, E.H.O., E.I.Q.A., and H.I.Q.A. and external audits e.g. Cater Care Ltd.
24. Developing and seeking ways to improve skills and lead Kitchen Team.
25. Performing other duties relevant to the post as allocated by Group Catering Manager.

Requirements:
* Ability to travel between different nursing homes.
