Ballymaloe House Hotel are looking for an experienced, talented, hardworking Junior Sous Chef to join our award-winning Kitchen team, led by the Executive Head Chef, Dervilla O'Flynn.
Our menus change often, we cook with the seasonal produce from the walled garden, and local producers.
Primary duties will include preparing food before meal service, setting up and stocking kitchen stations, plating cooked foods.
Day to day duties will include:
* To assist the kitchen team with food production.
* Preparing, cooking, and creatively presenting the dishes at the required standard
* To ensure all dishes are prepared in a timely fashion and to high standard
* To prepare meat and fish.
* To monitor portions sizes and waste control.
* Wrapping and storing of unused food stock at the end of the shift.
* Assist Head Chef and Sous Chef in creating menu items and new dishes.
* Assist with the management of Health & Safety.
* Comply with the food hygiene practices and food safety standards (HACCP)
* Attend training within the Department as required.
* Wrapping unused items & storing them in proper areas at the end of a shift
* Cleaning and sanitising the kitchen after service.
