Key Responsibilities
Assist in the daily management and operation of the hotel bar, ensuring exceptional service standards at all times.
Lead, motivate, and support the bar team to deliver outstanding guest experiences.
Supervise service periods, ensuring efficient operation and strong attention to detail.
Assist with recruitment, onboarding, training, and development of bar staff.
Prepare and manage staff rosters in line with business requirements.
Monitor stock levels, place orders, and support effective inventory management.
Assist with beverage menu development, promotions, and seasonal offerings.
Ensure all licensing laws, HACCP procedures, health and safety standards, and company policies are adhered to.
Handle guest feedback and resolve service issues in a professional and timely manner.
Support the achievement of departmental budgets, revenue targets, and cost controls.
Maintain strong communication with the kitchen, restaurant, events, and wider hotel teams.
Conduct regular quality checks to ensure presentation, cleanliness, and service standards are maintained.
Assist in cash handling procedures, end-of-day reconciliations, and reporting requirements.
Lead by example, creating a positive and professional working environment.
Key Requirements
Minimum 2 years' experience in a supervisory or assistant management role within a hotel bar, restaurant, or high-volume hospitality environment.
Strong leadership and team management skills.
Excellent customer service and communication abilities.
Passion for food, beverage, and delivering exceptional guest experiences.
Strong knowledge of wines, spirits, cocktails, and current beverage trends.
Experience with stock control, ordering, and cost management.
Good understanding of licensing legislation, HACCP, and health & safety regulations.
Ability to work effectively under pressure in a fast-paced environment.
Flexible approach to working hours, including evenings, weekends, and public holidays.
Excellent organisational and problem-solving skills.
Fluent English, both written and spoken.
Must have legal entitlement to work in Ireland.
Desirable
Previous experience within a luxury hotel or resort environment.
WSET qualification or equivalent beverage certification.
Experience using hospitality EPOS systems.
Knowledge of cocktail creation and beverage menu development.
