M Luxury Recruitment is currently searching for an Executive Head Chef for a luxury Hotel located in Co. Galway area This hotel has several Dining Outlets, IRD, but no banqueting. We are ideally looking for a head or sous chef with a hotel background. This property has its own vegetable and herb gardens.ResponsibilitiesPlan and direct food preparation and culinary activitiesRun a sustainable kitchen with minimum waste.Modify menus or create new ones that meet quality standardsEstimate food requirements and food/labor costsSupervise kitchen staff's activitiesArrange for equipment purchases and repairsRecruit and manage kitchen staffRectify arising problems or complaintsPerform administrative dutiesComply with nutrition and sanitation regulations and safety standardsKeep time and payroll recordsMaintain a positive and professional approach with coworkers and customersRequirementsProven working experience as a head chef or Exec Sous in a four or five-star hotel.Excellent record of kitchen managementAbility to spot and resolve problems efficientlyCapable of delegating multiple tasksCommunication and leadership skillsKeep up with cooking trends and best practicesWorking knowledge of various computer software programs (MS Office, restaurant management software, POS)BS degree in Culinary science or related certificate desired
