Job Description
Flat Coffee are seeking an experienced and passionate Specialty Coffee Production Manager to join our roastery team.
This full-time role is central to the design, development, and execution of our coffee roasting operations, ensuring premium quality across every batch while managing production resources and team performance.
Master Roasting Operations: Operate and maintain specialty coffee roasting equipment, executing precise roast profiles tailored to bean origin and intended flavour outcomes, while planning production schedules to meet business demand and customer requirements.
Blend and Recipe Development: Design and refine roast curves and blends to meet company flavour standards and seasonal offerings.
Sensory Analysis and Cupping: Lead cupping sessions and perform regular sensory evaluations to assess and improve product quality, providing structured reports to management.
Green Coffee Evaluation: Assess green bean quality and support sourcing decisions with tasting notes, moisture and density analysis.
Quality Control: Implement and manage quality control procedures at each stage of production - from sample roasting to packaging, ensuring compliance with company and industry standards.
Machinery Expertise: Set up, calibrate, and troubleshoot roasting and grinding equipment to maintain consistency and safety, overseeing maintenance schedules and cost efficiency.
Collaboration: Work closely with sourcing, barista, and café teams to ensure coffee quality from origin to cup, and liaise with management to align production with company goals.
Team and Resource Management: Supervise roasting and production staff, allocate tasks, monitor performance, and ensure targets and deadlines are met.
Reporting: Prepare regular production, cost, and quality reports for senior management, recommending improvements where necessary.
Requirements:
Minimum 3 years of hands-on roasting experience in a specialty coffee environment.
Deep understanding of coffee profiles, sensory science, and third-wave coffee standards.
Proven ability to design roast recipes and blends independently.
Experience with automated roasting systems (e.g., Stronghold, Loring, Diedrich).
Strong cupping and quality control skills (CQI or SCA training desirable).
Familiarity with green coffee sourcing and storage best practices.
Excellent attention to detail and passion for flavour development.
Demonstrated experience in managing production teams, meeting output targets, and controlling production costs.
