Under the direction of the restaurant managers and the Director, the delivery - Kitchen Porter is responsible for the safe and efficient receipt and storage of goods delivered to the restaurant.
Delivery and Stock Technician
Responsibilities
* Receives, unloads, decants and checks incoming goods and stores in the appropriate designated location suitable for dry goods, frozen goods, chilled goods, wines and soft drinks.
* Checks the shelf life of goods on arrival and ensures they are of accurate quantity, quality, weight and type, as ordered.
* Checks temperature of frozen and chilled foods and ensures they are haccp compliant
* Checks temperature of refrigerated delivery vehicles and ensures they are haccp compliant
* Carrys out ad hoc inspections of delivery vehicles and ensures they are haccp compliant
* Reports any invoice discrepancies to Management and brings discrepancies immediately to the attention of local suppliers or the internal warehouse.
* Deals with return of unsatisfactory goods
* Assists with unloading vans and other vehicles when deliveries arrive at the restaurant
* Places orders on a daily basis to external suppliers and internal warehouse and is responsible for stock replenishment
* Checks the shelf life of goods on a regular basis and communicates same with the chef and restaurant manager
* Contacts the sales offices of local suppliers and coordinates dispatch and delivery of goods
* Moves and organises stock and manages space efficiently
* Operates an FIFO (first in first out) stock system
* Ensures a clean, safe and secure work environment
* Ensures a clean and safe external environment in rear areas of the restaurant
* Advises staff on stock rotation and storage
* Monitors stock levels and performs stocktaking under the instructions of the restaurant accountant
* Adheres to health & safety and haccp procedures
* Completes haccp forms in relation to the position and carries out related administrative duties
Kitchen Steward
Primary Responsibilities
* Wash pots and pans by hand, to wash cutlery and dishes in dishwashers or by hand.
* Unload deliveries, and store them according to kitchen supervisors.
* Ensure proper storage of foodstuffs.
* Wash and peel vegetables.
* Assist chefs and deli assistants in preparing and serving high standard food and desserts.
* Operate and clean equipment correctly and safely adhering to cleaning and maintenance schedules.
* Ensure work areas are kept clean, safe and tidy at all times.
* Make sure that all work surfaces, cookers and machines are clean and free from germs.
* Sweep and mop floors.
* Follow rigidly and observe all hygiene regulations.
* Additional duties as required, to comply with any reasonable request by the Head Chef, Supervisor or Management.
Qualifications and Skills
· 2 years experience in a previous role is required
· Proficient in Mamut or similar software
· Acquaintance with and capability of adherence to HACCP requirements, HACCP certificate
· Knowledge of basic food regulations based on HMS (Hygiene Management Systems)
· Knowledge of Health and Safety rules and procedures.
· Ability to establish priorities, and to proceed with objectives.
· Previous experience in similar role within a restaurant environment.
