Main Duties:
* To manage the supervision of all Bar areas including Main Bar, Function Bar & Terrace Bar in accordance with the banqueting/bar policy.
* Responsible for the efficient dispensing and serving of all drinks.
* To ensure presentation of the Hotel is of the highest standard at all times, thus ensuring that the bar areas are kept clean at all times.
* To ensure a good working environment exists within your Department.
* To prepare Bar Rota in conjunction with the business needs of the Hotel and sign off on payroll hours.
* To communicate the required operating standards to all bar staff and ensure they understand and implement such standards at all times and are fully briefed and trained accordingly.
* To ensure every customer is given a receipt and staff are trained accordingly.
* To ensure the accuracy of all floats by checking them and reporting irregularities.
* To control and ensure stock-taking procedures are adhered to and weekly targets are achieved.
* To achieve a Gross Profit margin and Net margin as agreed with the GM/Proprietors.
* To be responsible for the allocation of stock, procedures and monitoring of Night Porters Press.
* Have in-depth knowledge of all Health & Safety regulations and how they relate to the Hotel.
* To seek opportunities to develop yourself in relation to technical training and professional development.
* Conduct performance appraisals and regular staff training.
* Ensure staff comply with grooming, uniform, and service standards.
* Design and update beverage menus, ensuring alignment with current trends and customer preferences.
Requirements:
* Proven experience as a Bar Manager in a hotel or upscale hospitality environment.
* Flexibility.
* Can do attitude.
* Vast knowledge of food and beverage service experience.
