Role Overview
We are seeking an experienced and motivated Chef de Partie to join our kitchen brigade at Dunbrody Country House Hotel. This is an excellent opportunity for a talented culinary professional to develop their skills in a high‑quality, seasonal kitchen environment. The successful candidate will take ownership of their designated section, producing exceptional dishes that reflect the ethos of the Dunbrody kitchen — fresh, local, elegant, and full of flavour.
Key Responsibilities
Culinary Duties
Take full responsibility for your designated section, maintaining the highest standards of food production at all times.
Prepare and present dishes to the standard and specification set by the Head Chef / Sous Chef.
Contribute creatively to menu development, seasonal specials, and tasting menus in collaboration with senior chefs.
Ensure mise en place is completed to the required level in advance of each service.
Maintain consistency of quality, presentation, and portion control across all dishes from your section.
Demonstrate an understanding and appreciation of local, seasonal, and artisan produce.
Kitchen Operations
Support the Sous Chef and Head Chef in the smooth running of kitchen operations.
Assist with stock rotation, ordering, and minimising waste in line with hotel sustainability goals.
Ensure your section is kept clean, organised, and compliant with all food safety requirements at all times.
Participate actively in team briefings, tastings, and training sessions.
Standards & Compliance
Adhere strictly to all HACCP procedures, food safety legislation, and hotel hygiene standards.
Complete all required food safety documentation accurately and on time.
Report any maintenance issues, safety hazards, or equipment faults to the appropriate person promptly.

Person Specification
Essential
Minimum 1–2 years' experience as a Chef de Partie or strong Commis Chef in a quality restaurant or hotel kitchen.
Proven ability to work at speed under pressure while maintaining exceptional standards.
Sound knowledge of food safety and HACCP practices.
Excellent organisation, time management, and mise en place skills.
A genuine passion for food, local produce, and seasonal cooking.
Strong team player with a positive, can‑do attitude.
Desirable
Familiarity with allergen legislation and dietary requirements.
Interest in kitchen gardening, foraging, or artisan food production.
