Trinity Care, a leading nursing home group, is currently recruiting a full-time Chef.
Elm Green is a homely Nursing Home based on Dunsink Lane, Castleknock Dublin 15. We are looking for an experienced Chef to join our dynamic team. At Elm Green, we place our Residents at the heart of every decision we make.
Key Responsibilities:
1. Produce and present food to high standards and specifications, utilizing resources effectively and efficiently.
2. Ensure full compliance with all aspects of the H.A.C.C.P. system within Elm Green Nursing Home, implementing new developments or recommendations as required.
Key Accountabilities:
* Preparation of both raw and cooked food.
* Cooking and presentation of food according to dietary requirements.
* Decanting, portioning, and packing of food.
* Manage food costs, disposables, chemicals, ordering, stock rotation, and minimize wastage.
* Labeling, chilling, and storing food per Food Safety Policy.
* Communicate with Residents, adhere to their food plans, and address their needs.
* Keep D.O.N. and Group Catering Manager informed of issues.
* Prepare three 4-week cycle menus and allergen listings annually, following nutritionist reports.
* Regenerate and serve food.
* Maintain accurate H.A.C.C.P. records, training, payroll, and record additional hours on T.M.S.
* Maintain cleanliness and order in your area.
* Use materials and equipment efficiently and economically.
* Practice hygiene, cook-chill, health, and safety procedures consistently.
* Report mechanical defects and repair needs.
* Secure your work area and equipment.
* Manage and develop your team.
* Report accidents, fire, stock loss, damage, unfit food, and take appropriate action.
* Assist staff with portion control.
* Conduct monthly stocktaking and prepare reports.
* Check the quality of received goods.
* Liaise with user groups on menu and service provision.
* Participate in training courses.
* Stay updated with industry developments and incorporate new food trends.
* Achieve top results in audits and external assessments.
* Seek continuous improvement in skills and lead the Kitchen Team.
* Perform other relevant duties as assigned by the Group Catering Manager.
