Join our team at the prestigious Cashel Palace Hotel in Cashel, Ireland, as a Senior CDP/Junior Sous Chef for our fine dining establishment, The Bishops Buttery. We're seeking an enthusiastic and detail-oriented culinary professional to help lead our kitchen team in creating exceptional dining experiences for our guests.
* Assist in overseeing daily kitchen operations, ensuring high standards of food quality and presentation
* Collaborate with the head chef and sous chefs to develop innovative recipes, dishes, and menus
* Manage and mentor junior kitchen staff, fostering a positive and productive work environment
* Ensure compliance with food safety regulations and maintain proper hygiene standards
* Contribute to menu planning, incorporating seasonal and local Tipperary produce
* Assist in inventory management and cost control measures
* Participate in the preparation and execution of special culinary events and promotions
* Maintain open communication with front-of-house staff to ensure seamless service
* Continuously research and stay updated on culinary trends and techniques in fine dining
Qualifications
* Culinary degree or equivalent experience in fine dining establishments
* Minimum 3-5 years of experience in upscale restaurants or luxury hotels, with experience in a 5-star hotel preferred
* Proven track record of producing high-quality cuisine in a fast-paced environment
* Strong leadership skills with the ability to motivate and manage kitchen teams
* Excellent knowledge of fine dining cuisine, techniques, and current culinary trends
* Creativity in menu development and dish presentation
* Proficiency in kitchen management systems and inventory control
* HACCP certification or equivalent food safety management qualification
* Strong organisational and time management skills
* Ability to work effectively under pressure and adapt to changing priorities
* Passion for using local, seasonal ingredients with knowledge of Tipperary produce and Irish cuisine
* Excellent communication skills and ability to work collaboratively in a team environment
* Commitment to continuous learning and professional development in the culinary field
