Package Includes Accommodation Provided x 3 Months and €45/ week thereafter (Management House) €50-60k DOE with Bonus Pension contribution Staff Gym Max 45 Hours working week Requirements: Previous experience in a similar senior role within a 4-5* hotel /AA/AAA or Michelin property preferred A creative flair and passion for cooking with local, fresh, seasonal and quality ingredients Excellent management and organisational skills are essential HACCP Qualification to Management level Experience in managing a large team Ability to manage the team and kitchen in the head chef's absence flawlessly A progressive attitude towards training, developing and motivating the team An ability to lead by example within a fast-paced kitchen environment Main Responsibilities: Assist in the design and delivery of new menu concepts that reflect customer demand Manage and oversee the smooth running of the day to day operation of the kitchen Maintain consistently high standards and quality across all areas of the food operation Understand the budget and work to the agreed targets on food cost, labor hours etc. Recruitment, training and retention of team members Management of the kitchen payroll on a weekly and monthly basis Set personal and department objectives for direct reports and monitor and review regularly.
