The 4-star Ardilaun Hotel is currently seeking an experienced and motivated Bar Manager to join the team. The Bar Manager will oversee all aspects of the bar operation, leading the team to deliver excellent service while maintaining strong operational control. This is a hands‑on role suited to someone who enjoys leading a team and maintaining high standards.

Formerly a country mansion, the 4* Ardilaun Hotel boasts 123 luxury bedrooms with a superb conference centre, wedding venue and leisure club facilities. It is independently owned and operated by the Ryan family, having celebrated 64 years in business. Nestled in Galway's suburbs, in a secluded setting in leafy Taylor's Hill just 1km from Galway City, Galway Bay, and Salthill, our hotel provides a serene setting. Responsibilities
Manage the daily operation of the bar, ensuring smooth service
Maintain high standards of service, presentation, and cleanliness at all times
Ensure consistent quality in drinks service, product knowledge, and guest interaction
Oversee opening and closing procedures and daily cash handling
Recruit, train, and develop bar staff to deliver a professional and friendly service
Create and manage staff rosters in line with business needs and labour budgets
Provide ongoing coaching, feedback, and performance management
Lead by example, maintaining a positive and motivated team culture
Manage stock ordering, deliveries, storage, and stock rotation
Carry out regular stock takes and ensure accurate records are maintained
Ensure full compliance with licensing laws, health & safety regulations, and hotel policies
Maintain strong controls around cash handling, security, and responsible alcohol service
Work closely with senior management and other departments, particularly Food & Beverage, Events, and Front Office
Support functions, events, and busy periods in coordination with banqueting and restaurant teams
Contribute ideas to improve service standards, guest experience, and bar performance
Requirements
Previous experience in a senior/manager role within a bar or hospitality environment
Ability to lead and motivate a team, with strong organizational and communication skills
Exceptional customer service skills with a passion for delivering a memorable guest experience
Strong knowledge of mixology, spirits, wine, and craft beers
A hands‑on, practical approach with attention to detail
Strong problem‑solving abilities and the capacity to handle difficult situations with professionalism
Availability to work various shifts, including evenings, weekends, and holidays
Strong in barista work and coffee preparation
High standards of cleanliness and presentation
Strong sales and upselling skills to enhance guest experience and revenue
