Donegal is seeking an experienced Bar Manager to take full operational ownership of a busy bar and food-led operation.

This role suits a strong, hands-on operator who is comfortable working autonomously and taking responsibility for front-of-house bar operations.
The Role You will oversee the full day-to-day operation of the venue, ensuring high standards of service, strong cost controls, and a well-run team across bar and kitchen.
This is a senior, accountable position with genuine scope to shape how the business operates.
Key Responsibilities Operations Service * Full responsibility for daily bar and food operations * Maintain high standards of service, presentation, and customer experience * Ensure compliance with licensing, food safety, and health safety requirements Stock Cost Control * End-to-end responsibility for bar stock management and ordering * Tight control of stock, wastage, and margins across wet sales and food * Accurate weekly and monthly stock takes * Liaise with suppliers and manage pricing and ordering Staff Management (Bar Kitchen) * Recruit, train, roster, and manage bar staff * Oversee kitchen staffing and coordination, working closely with the chef once appointed * Manage performance, discipline, and team development * Ensure strong communication between front and back of house Kitchen Food Oversight * Maintain standards in line with HACCP and food safety requirements * Support service flow, timing, and quality control (non-cooking role) Marketing Business Development * Plan and deliver local marketing, promotions, and events * Manage social media activity and promotional campaigns * Drive sales through events, live sports, entertainment, and seasonal initiatives Administration Reporting * Provide regular reports on sales, stock, staffing, and performance * Communicate proactively with ownership, flagging issues and opportunities * Ensure systems and procedures are consistently followed Candidate Profile * Proven experience as a Bar Manager or senior hospitality manager * Strong stock control and cost management background * Experience managing both bar and kitchen teams * Working knowledge of kitchen operations and food safety * Confident, organised leader comfortable working independently * Full driving licence and own transport * Experience opening or relaunching a venue * Marketing, social media, or event promotion experience * Strong commercial mindset and POS/stock system experience Personal Attributes * Highly motivated and self-driven * Trustworthy and dependable * Hands-on, practical, and calm under pressure * Takes genuine ownership and pride in the business What's Next?
