Key Job Responsibilities
* Wood-Fired Operation: Mastering the management of wood-fired ovens, including controlling heat, managing the fire, and using a pizza peel/paddle for consistent, high-quality baking.
* Pizza Preparation: Preparing, hand-stretching, and topping artisanal pizza dough, with expertise in Italian-style or Neapolitan, pizza (including sauces and toppings).
* Kitchen Management: Maintaining strict HACCP standards, food safety, and cleanliness, along with managing workstation stock and cleaning.
* Service Efficiency: Working under pressure to deliver high-quality, authentic, and fast-paced service, including during peak dining hours.
Key Requirements
* Experience: 3+ years in a professional kitchen, specifically with hands-on experience in a wood-fired/pizza-specific environment.
* Skills: Proficiency in dough handling, pizza crafting, and using traditional wood-fired ovens.
* Work Ethic: A calm & positive, team-oriented attitude with the ability to handle high-pressure situations.
