Junior Sous Chef – The Four Winds Bar & Restaurant

Reports to: Head Chef
Salary Range: €32,000 – €35,000 per annum (DOE) + benefits.

About Us
The Four Winds Bar & Restaurant is a busy, high-performing venue in the heart of Charleville. We combine a warm Irish welcome with excellent food, great drinks, and a lively atmosphere. Our current menu blends fast casual with elevated pub classics, but 2026 will see major expansion into a high-volume, gastro-led offering — with more scratch cooking, seasonal produce, and consistent quality at scale.
We're seeking an ambitious Junior Sous Chef to play a central role in that journey.
The Role
As Junior Sous Chef, you will be the right hand to the Head Chef, leading daily kitchen operations, maintaining high culinary standards, and supporting the team's growth and training. You'll balance hands-on cooking with kitchen management duties, ensuring the pass runs smoothly even at peak service.
Key Responsibilities
* Assist the Head Chef in designing and delivering a high-quality, high-volume gastro menu
* Lead service in the Head Chef's absence, ensuring smooth operations and quality control
* Supervise and train kitchen staff, building skills and consistency across the team
* Maintain strict food safety, hygiene, and allergen protocols (HACCP compliance)
* Control stock levels, ordering, and waste management to hit gross profit targets
* Help implement seasonal menu changes and specials in line with brand direction
* Monitor portion control and presentation to maintain brand standards
* Work closely with FOH management to ensure excellent guest experience
* Support recruitment and onboarding of new kitchen staff
* Maintain a clean, organised, and safe kitchen environment
Requirements
* Minimum 3 years' experience in a high-volume, quality-focused kitchen, ideally at Chef de Partie or Sous level
* Strong cooking skills across multiple stations.
* Proven ability to lead a team during busy service
* Understanding of stock control, GP targets, and kitchen costings
* HACCP certification and excellent knowledge of food safety standards
* A passion for fresh, seasonal, high-quality food
* Calm under pressure with a solutions, not problems mindset
* Flexibility to work evenings, weekends, and holidays as required
