This role is responsible for the smooth and efficient execution of all conference and banqueting functions, delivering high-quality food in line with five-star standards. The Banquet Head Chef will oversee a dedicated banqueting team, ensuring consistency, innovation, and excellence across a diverse range of events including weddings, conferences, and bespoke functions. This position reports directly to the Executive Sous Chef and Executive Chef, and plays a key role in upholding kitchen standards, mentoring junior team members, and supporting broader kitchen leadership initiatives. Key Responsibilities: Lead all kitchen operations related to banqueting, ensuring consistent quality, efficiency, and presentation in line with hotel standards. Oversee planning, preparation, and execution of all banquet menus (from canapé receptions to plated gala dinners and buffet events). Collaborate closely with the events and conference teams to understand requirements and translate them into operational kitchen plans. Ensure HACCP and food safety protocols are followed meticulously across all banqueting production and service. Manage banqueting kitchen team rosters, training, and performance in collaboration with Executive Sous Chef and Executive Chef. Monitor food cost, portion control, and waste management to maintain profitability targets without compromising quality. Foster a culture of excellence, development, and accountability within the banqueting kitchen team. Support succession planning by mentoring future leaders within the banqueting section. Candidate Profile: Essential: Proven experience as a Sous Chef or Head Chef in high-volume, high-standard banquet or event environments. Strong knowledge of modern banquet production methods and service styles (buffet, plated, hybrid formats). Exceptional organisational and leadership skills with the ability to manage multiple events simultaneously. Knowledge and implementation of HACCP and kitchen compliance standards. Ability to remain calm under pressure while leading a diverse team. Excellent communication and collaboration skills across departments. Desirable: Experience in a five-star hotel or luxury events environment. Formal culinary qualification. Experience with menu development and cost control software. Working Environment: The role involves working flexible hours, including evenings, weekends, and public holidays in line with event requirements. The Banquet Head Chef will be based in the main hotel kitchen, coordinating closely with other outlets including Sika Restaurant, Sally Gap Bistro, Afternoon Tea, and Breakfast Operations.
