Daytime Chef – Dublin South Excel Recruitment is currently seeking an experienced and passionate Daytime Chef for our client's high-end retail food operation based in South Dublin.

The ideal candidate will be a strong leader in food production, recipe innovation, team management, and kitchen operations, while also supporting the delivery of key financial targets and brand standards.Salary: €60k – €65k
Responsibilities: Oversee and lead kitchen and food production operations, ensuring outstanding quality and consistency in all food offerings
Manage the day-to-day running of food production and retail food counters across the site
Maintain and implement high standards of food safety, quality control, and HACCP compliance
Partner with the General Manager to achieve commercial and financial targets, including revenue, margin contribution, and operational efficiency
Drive continuous improvement in food preparation, presentation, and customer satisfaction
Lead the chef teams, providing mentoring, supervision, and performance management
Manage inventory and stock control, including FIFO, shelf-life management, and temperature checks
Ensure full compliance with health & safety, allergen protocols, and sanitation procedures
Stay informed on culinary trends, new products, and preparation methods to enhance the food offering
Oversee kitchen staff timekeeping, scheduling, compliance, and professional development Requirements: Recognised qualification in Culinary Arts or Food Production (preferred).
Valid Food Safety Certification (preferred)
At least 5 years' leadership experience in a high-quality food service, kitchen, or retail food operation
Proven experience in managing cross-functional teams and navigating structured environments
Strong understanding of HACCP, food regulations, and kitchen management systems
Excellent people management and organisational skills
Ability to work independently, prioritise tasks, and meet tight deadlines
Confident communicator with a strategic, solutions-focused mindset
