Job Summary:
The Commis Chef is an essential member of The Grace Westport Estate's culinary team, supporting the preparation, organisation, and execution of dishes across all kitchen sections. This entry-level role provides a strong foundation in professional cookery, offering hands-on experience in a refined, high-performance kitchen environment.
Under the guidance of senior chefs, the Commis Chef contributes to the estate's reputation for excellence by maintaining high standards of quality, efficiency, and hygiene in every task undertaken.
Key Responsibilities
* Assist with the preparation and cooking of menu items under the direction of the Chef de Partie and Sous Chef.
* Execute mise en place to the required standards, ensuring readiness for each service.
* Support various kitchen sections, gaining exposure across hot, cold, pastry, and sauce areas.
* Maintain consistency in taste, presentation, and portion control.
* Ensure all ingredients and equipment are prepared, stored, and handled safely and efficiently.
* Adhere to cleaning schedules and maintain workstations to the highest hygiene standards.
* Assist in stock rotation, labelling, and waste management to support cost-control objectives.
* Comply with kitchen procedures, recipes, and plating specifications.
* Take an active role in ongoing culinary training, learning new techniques and developing skills across kitchen disciplines.
* Seek feedback and coaching from senior chefs to enhance performance and knowledge.
* Contribute positively to team meetings, briefings, and service preparation.
* Adhere to all HACCP, food safety, and hygiene regulations.
* Maintain proper uniform standards and personal presentation.
* Report any maintenance or safety concerns promptly to supervising chefs.

Required Experience & Skills
* Previous experience in a professional kitchen or relevant culinary training desirable but not essential.
* Passion for food preparation and a desire to learn within a luxury hospitality environment.
* Strong work ethic, reliability, and willingness to follow direction.
* Good communication and organisational skills.
* Knowledge of basic food safety and hygiene practices (training provided).
* Eligibility to work in Ireland.
