Key Responsibilities
Support the Head Chef in the smooth running of the kitchen.
Maintain good working relationships between kitchen staff and dining room staff.
Take full responsibility for the kitchen operation in the Head Chef’s absence.
Prepare, provide, and present food to prescribed and agreed standards using available resources efficiently.
Participate in menu preparation and compilation for daily business and functions, contributing new ideas and suggestions.
Stay familiar with the hotel’s forthcoming business needs.
Have a good knowledge of the HACCP system and ensure its implementation and compliance in the kitchen.
Ensure kitchen staff strictly conform to HACCP regulations.
Adhere to cleaning schedules and complete temperature checklists.
Deal effectively with guest complaints.
Work with the Head Chef to achieve agreed food percentages through purchasing control, portion control, and monitoring food production and wastage.
Assist the Head Chef in purchasing food items via Procure Wizard.
Attend Head of Department meetings in the Head Chef’s absence.
Assist with stock takes as necessary.
Be familiar with hotel health & safety and fire regulations.
Provide training and supervision of new staff.
Participate in the formulation of all new menus.
Ensure deliveries are stored correctly promptly after delivery.
Ensure deliveries are cross‑checked with purchase orders and weighed correctly.
