We are looking for a Senior Chef de Partie who would like to become part of our team of chefs. This is a full-time permanent position. The candidate MUST be permitted to work in Ireland. We are located in the small fishing village of Portmagee where seafood plays a large part on the menu.
Requirements:
* We are looking for an energetic, motivated person who is willing to learn.
* Must have a minimum of 6 years previous experience and must be keen to progress within our kitchen.
* Fluent in English.
* Must have completed HACCP Training. Experience and pro-active in maintaining up-to-date kitchen records, such as temperature sheets.
* Follow rigidly and observe all hygiene regulations.
* Ability to prepare and produce food for the area which you are assigned and to the agreed standards in conjunction with the other chefs.
* Keen to minimize wastage.
* Ensure all necessary mis-en-place are ready prior to service.
* Experienced and pro-active in maintaining a clean, prepped, and organized kitchen.
* Resilient and ability to work in a fast-paced, high-pressure environment.
* European-style cooking experience.
* Experience essential in all areas of the kitchen including "on the grill", cooking meats and fish; "on the pass", controlling the pass, plating and sending the food; cold and dessert section.
* Knowledge/experience/training of classic French basics.
* Experience essential of managing and developing junior staff.
* Ability to work on their own in the head chefs absence, to maintain excellent standards, and to give direction to junior staff.

Portmagee has since become a tourist hot spot for tourists and fans to visit the once "sleepy town of Portmagee" to listen to the stories from the locals and visit the Island where the magic took place.
