Job Description: As a Chef de Partie in our Chinese restaurant, you will manage the deep-frying section in our busy kitchen and work with your team to serve the needs of guests and provide excellent customer service and authentic taste of Chinese dishes. Therefore, this position must perform the following tasks to the highest standards: To prepare a wide variety of Chinese style fried foods to guests To ensure a fine taste of the food and deliver the best guest experience To ensure that the products are of high quality. To marinate food items with proper Chinese style seasoning To process food items with fine slicing techniques To produce foods that are crispy outside and moist and tender inside To prepare and get the food items ready to cook To provide customized service to suit customers needs To control the oil temperature for different meats,becoming an expert in timing To cook each component of food items with exact timing to achieve golden color and a proper degree of doneness for further cooking by head chef. To maintain deep fryer quality by regularly filtering and changing oil To maintain fresh oil and fry strongly flavored foods separately To manually beat and mix Chinese style starchy solution To fry foods with dry starch and starchy solution To ensure that kitchen equipment and tools are handled properly. To check on the hygiene and sanitation of the Fried Food area. To co-ordinate with the head chef, food and beverage controller and the purchasing department regarding proper food selection and storage. To conduct personnel training programs for the commis chefs, improving the teams working capability. To carry out other duties as and when required by the Head Chef. To cook the required number of food items for a particular set of customers and prepare food items for another set of customers at the same time To supervise the serving of fried foods to the customers and oversee all the fried cooked activities of the kitchen in the restaurant To cook some food items earlier and store them properly, which are required to be served later to the customers To direct and supervise the junior fry cook for the successful serving management of all the fried food items To control the precise timing for fried foods to become crispy or follow up with the head chefs requirement, cooked throughout, grease-free and not overcooked. To follow and enforce the hygiene and safety standard set by the Hygiene Department. To know the restaurant's fire and safety procedures and operation of kitchen and firefighting equipment. Key Requirements: To successfully fill this role, you should maintain the attitude, behaviors,and skills that follow: Relevant qualifications in Chinese Cuisine At least 2 years' experience in similar role within the Chinese catering sector General knowledge of Chinese language advantage Excellent interpersonal and communication skills Ability to work under pressure Flexibility to respond to a variety of work situations Essential: Languages :English C2-Master (Fluent), Chinese C2-Master (Fluent) Comparison mode :AND - All Languages must match criteria.
