An Exciting Opportunity for the Right Candidate!

Trinity Care, a leading nursing home group, is currently recruiting a Floater Chef - Leinster Area.


Key Responsibilities:

To produce and present food to high standards and specifications, utilizing all resources effectively and efficiently. Ensure full compliance with all aspects of the H.A.C.C.P. system within Nursing Homes, and implement new developments or recommendations as required.


Key Accountabilities:

1. Preparation of both raw and cooked food.
2. Cooking and presentation of food according to specific dietary requirements.
3. Decanting, portioning, and packing of raw and cooked food.
4. Managing food costs, disposable and chemical costs, ordering, stock rotation, and minimizing wastage.
5. Labelling, chilling, and storing food following Food Safety Policies.
6. Communicating with Residents, adhering to their food plans, and addressing their needs.
7. Keeping the D.O.N. and Group Catering Manager informed of issues promptly.
8. Preparing at least three 4-week cycle menus and allergen listings annually, aligned with the Nutritionist's report.
9. Regenerating and serving food.
10. Maintaining accurate H.A.C.C.P. records, training, induction, payroll, and recording additional hours on T.M.S.
11. Maintaining cleanliness and order in your assigned area.
12. Using materials and equipment efficiently and economically.
13. Adhering to all specifications, standards, and procedures.
14. Practicing hygiene, cook-chill, and health and safety procedures consistently.
15. Reporting mechanical defects and repair needs.
16. Securing your area and equipment.
17. Managing and developing your team effectively.
18. Reporting accidents, fire, stock loss, damage, unfit food, and taking appropriate action.
19. Assisting staff with portion sizing in packing/plating areas.
20. Conducting monthly stocktakes and preparing CPL and stock reports.
21. Checking the quality of received goods as per specifications.
22. Liaising with user groups on menu compilation and service provision.
23. Participating in training courses as required.
24. Staying updated with industry developments and assisting in their implementation.
25. Aiming for excellence in audits and external inspections.
26. Seeking ways to improve skills and lead the Kitchen Team.
27. Performing other duties as assigned by the Group Catering Manager.
28. Travel between different nursing homes as needed.
