SCOPE & GENERAL PURPOSE OF JOB:
Reporting to the Food & Beverage Manager, you will be accountable for customer care and service in all Food & Beverage areas throughout the hotel. You will work with the team to maximize sales opportunities, develop employees, and ensure high standards and value for money for customers.
The role also involves managing the hotel bar operations. The ideal candidate should have at least two years of experience managing bar operations in a four or five-star hotel.
GENERAL ACCOUNTABILITIES:
* Assist the F&B Manager in establishing and maintaining performance standards in Food & Beverage service areas.
* Train, manage, and motivate team leaders and staff, ensuring ongoing development.
* Ensure excellent customer care, handle complaints, and communicate feedback to management.
* Maintain stock levels, document stock movements, and record transfers and issues.
* Enforce hotel clock-in rules, manage rosters, and control costs.
* Participate in management team activities, showing flexibility and awareness of colleagues' needs.
* Recruit suitable employees, fostering morale and pride in the department.
* Collaborate with HR to develop training plans.
* Attend necessary training, appraisals, and meetings.
* Maintain compliance with company policies, health & safety, and legal requirements.
SPECIFIC ACCOUNTABILITIES:
* Achieve budget targets for bars, control costs, and manage purchasing specifications.
* Manage stock levels and documentation in each bar.
* Ensure safe working practices and adherence to procedures by beverage staff.
* Oversee cash procedures, including float counts, transactions, and reconciliation.
* Develop good relations with beverage suppliers.
* Assist in creating weekly rosters, considering revenue and labor budgets.
Additional duties may be assigned by senior management.
