Assistant Brewer – Job Description
Position Overview
The Assistant Brewer supports the brewing team in all aspects of beer production. This role ensures that brewing operations run safely, efficiently, and in line with quality standards. The ideal candidate is passionate about brewing, curious about brewing, and at ease within a brewery environment.
Key Responsibilities
Brewhouse Operations
* Assist with mashing-in, lautering, wort boiling, whirlpooling, and transferring.
* Operate the brewhouse equipment under supervision (valves, pumps, CIP systems, controls).
* Weigh, handle and add in raw materials (malt, hops, adjuncts) with good housekeeping and attention to detail.
* Maintain a strict adherence to the Breweries recipes, SOPs and Cellar workflows.
Cellar Work
* Monitor fermentations, record gravity checks, temperatures, and sensory observations.
* Manage yeast handling: cropping, pitching, and tracking yeast health with the QA lab.
* Perform tank work including purging, cleaning, sanitizing, and transfers.
* Filtration, and carbonation of finished product for packaging.
Quality Control & Record-Keeping
* Perform sensory evaluations during all stages of production.
* Conduct basic lab tasks: pH checks, gravity readings, CO₂/DO where required.
* Maintain detailed traceability records as you move Beer through the process to packaging.
Cleaning & Sanitation
* Conduct CIP (Clean-in-Place) and SIP (Sanitize-in-Place) cycles.
* Clean brewhouse, cellar, floors, drains
* Ensure all equipment and workspaces meet hygiene and safety standards.
General Brewery Support
* Assist with goods inwards and ingredient management.
* Move malt, pallets, and other heavy items safely to their point of use or storage.
Skills & Qualifications – Required
* Strong interest in working in the Brewing Industry.
* Ability to safely lift up to 25–30 kg (55–66 lb) repeatedly.
* Comfortable working in a food production environment.
* Mechanical aptitude and willingness to learn equipment operation.
* Willingness to follow instructions, SOPs, and safety protocols.
* Capable of Computer use on Microsoft Word, Excel and Outlook.
* Strong work ethic and attention to detail.
Skills & Qualifications – Preferred but not essential.
* Full B category Drivers Licence with your own transport is an advantage.
* Experienced Homebrewers who want to move into Professional Brewing.
* Previous brewing, cellar, or packaging line experience.
* Brewing education or certifications (IBD, Siebel, brewing courses).
* Understanding of CO₂ handling, CIP systems, and food-grade hygiene.
* On the tools experience with pipework, pumps, valves, steam and PLC controlled software.
* Forklift licence or any previous experience.
Working Conditions
* This is Split day shift work that will include early weekday mornings & evenings.
* The Environment is a Brewing and Packaging operation with team interaction all day.
* The team is small and occasionally you will cross over to assist each other.
* Requires PPE (gloves, goggles, boots, hearing protection).
