We are currently recruiting an experienced and motivated Head Chef for a prestigious golf club in East Cork, home to a high-end brasserie-style restaurant serving breakfast, lunch, and dinner to both club members, hotel guests, and visiting golfers. This is a fantastic opportunity for a culinary professional to lead a well-established kitchen team in a refined, fast-paced, and rewarding environment.
As Head Chef, you will be responsible for overseeing all kitchen operations, developing seasonal menus, and ensuring the consistent delivery of high-quality dishes across all meal periods. The ideal candidate will be creative, organised, and passionate about fresh, locally sourced food with a strong understanding of brasserie-style cuisine.

Key Duties & Responsibilities:
Lead the day-to-day management of kitchen operations across breakfast, lunch, and dinner service
Develop and execute seasonal menus and daily specials that reflect a modern brasserie approach
Oversee and train a skilled kitchen team, fostering a positive and productive work environment
Ensure consistently high standards in food quality, presentation, and portion control
Maintain full HACCP compliance and uphold all food safety and hygiene regulations
Manage food cost, waste, inventory, and supplier relationships effectively
Collaborate with FOH and management teams to ensure a seamless guest dining experience
Support staff development and implement training plans to maintain high performance

Requirements:
Minimum 3–5 years' experience as a Head Chef or Senior Sous Chef in a high-volume, high-quality kitchen
Strong leadership and team management skills
Excellent knowledge of brasserie-style cooking with an emphasis on quality, seasonal ingredients
Comfortable managing multiple service periods and high guest volumes
Solid understanding of kitchen operations, HACCP, and food safety protocols
Proven ability to manage food costs, ordering, and supplier negotiations
Must be based in Ireland and hold valid authorisation to work in the Republic of Ireland
