About the Role
As Sommelier, you will take the lead in curating and delivering a wine experience that reflects the essence of The Hawthorn by Galway Bay, elegant, understated, and deeply rooted in place.
With full responsibility for the wine cellar, pairings, and guest engagement, you will craft moments of connection and refinement, guiding guests through personalised selections that enhance every dining occasion. In close collaboration with the Executive Chef and Director of Food & Beverage, you will express the spirit of The Hawthorn by Galway Bay through an exceptional programme of wine, whiskey, and storytelling.
Key Responsibilities
* Curate and manage an elevated wine list reflective of Irish terroir, classic regions, and modern trends.
* Deliver tableside service that is warm, confident, and personal.
* Design and execute food and wine pairings in collaboration with the Executive Chef.
* Lead wine education for all F&B team members, fostering knowledge and passion.
* Manage wine inventory, cellar organisation, and procurement.
* Host wine tastings, guest experiences, and private pairing events.
* Maintain full compliance with LQA/Forbes standards and Irish licensing law.
* Keep updated on international trends, sustainability in wine, and emerging producers.
Ideal Profile
* Minimum 2–3 years' experience as a Sommelier in a luxury or 5-star hotel environment.
* WSET Level 3 (or working towards) or equivalent certification required.
* Strong knowledge of Old and New World wines, whiskey, and local Irish producers.
* A natural storyteller with a guest-focused approach.
* Excellent communication, upselling, and team collaboration skills.
* Detail-oriented, with experience in cellar management and supplier negotiations
