Sous Chef – Howth Yacht Club

Location: Howth, Co. Dublin

Type: Full-time, Permanent

Schedule: 5 days per week, split between weekday and weekend shifts

Howth Yacht Club is Ireland's leading sailing clubs with a vibrant year-round calendar of dining, social and sailing events. We are currently building a passionate and skilled kitchen team and are recruiting a second Sous Chef to add to the team, someone to deliver consistency, creativity, and a great work–life balance.

The Role

We are seeking a motivated Sous Chef to take a hands-on role in the day-to-day running of service in the kitchen. Working closely with the Food & Beverage Manager and an experienced Sous chef, you will help bring the club's seasonal food vision to life. You may need to run service on your rostered shifts, will need to maintain standards, and contribute ideas to an evolving menu inspired by the coast and local produce.

Key Responsibilities

* Have ability to run kitchen service during your rostered shifts, ensuring smooth, consistent delivery.
* Maintain HACCP compliance, food safety standards, and kitchen cleanliness.
* Prepare and execute seasonal menus with a focus on local seafood and fresh Irish ingredients.
* Plan prep lists, stock rotation, ordering, and waste control.
* Support and train junior kitchen team members (approx. 3–4 across both shifts).
* Collaborate directly with the Chef Consultant on menu development, prep systems, and service standards.
* Work closely with the Food & Beverage Manager and front of house team to ensure a seamless member dining experience.
* Contribute to menu development and daily specials aligned with the club's food vision.

About You

* Proven experience in a busy restaurant, hotel, or club kitchen.
* Confident leading small teams and delivering seamless service.
* Strong understanding of HACCP and kitchen management systems.
* Passion for seasonality, seafood, and Irish ingredients.
* Organised, reliable, and calm under pressure.
* Enthusiastic about quality, consistency, teamwork and collaboration.
* An interest in sailing or a coastal life is a plus
