Our client is looking to significantly expand their range of premium laminated pastry offerings, focusing on producing buttery products for counter sales with a highly laminated, crispy, and crumbly finish. While there is existing sourdough production, they are keen to enhance this area too.This is a hands-on, skilled position for someone who is serious about their craft and takes pride in their baking. You will be stepping into a role that requires focus, reliability, and a commitment to quality.
What the Role Involves (Key Responsibilities):
• Sourdough Baking: Expertly mix, shape, proof, and bake sourdough loaves to consistently high standards, carefully monitoring dough development and fermentation.• Laminated Dough Production: Prepare and bake a variety of pastries, including laminated doughs, tarts, and enriched doughs, strictly following precise methods and recipes.• Quality & Consistency: Design and follow recipes and procedures exactly to ensure product quality and consistency every time. Perform visual and tactile quality checks.• Ingredient Handling: Accurately measure, weigh, and handle ingredients with care, managing storage and rotation.• Teamwork & Collaboration: Work smoothly with other bakery team members.• Hygiene & Safety: Maintain a clean workstation and fully comply with food safety and Health & Safety standards.• Documentation: Log key process details during shifts.• Training & Support: Help bring new team members up to speed when needed.• Problem-Solving: Be proactive in identifying and resolving issues.
What We're Looking For in a Baker:
• Expert Level Skills: Demonstrated expert level in both lamination and sourdough is highly desirable. Proven experience in these specific areas is a necessity.• Professional Experience: 2+ years’ professional baking experience, ideally with sourdough and laminated doughs.• Technical Understanding: A good understanding of fermentation, dough handling, and pastry techniques is required.• Essential Portfolio: Candidates must provide a portfolio of their work. This is essential for assessing your style and skill level early in the process.• Team Player: Strong communication skills and a team-first attitude are important.• Reliability: A positive, reliable, and professional approach to work with a genuine interest in food and craft baking.• Flexibility: Willingness to work early starts and/or night shifts depending on production needs, as the site operates 24/7.
