Senior Bakery Chef / Head Baker – Wholesale Production

Location: Dublin 12

Company: Somun Wholesale Bakery

Somun is a growing wholesale bakery specialising in artisan and niche breads supplied to cafés, restaurants, hotels, and foodservice partners across Dublin and beyond. We are now seeking a Senior Bakery Chef / Head Baker to take full ownership of our bakery operations and lead production as we scale.

This is a hands-on leadership role suited to an experienced bakery professional who is confident running bulk production, maintaining high quality and consistency, and training a team in a fast-paced, HACCP-driven environment.

The Role

As Senior Bakery Chef, you will be responsible for the end-to-end operation of the bakery, from production planning to staff training and quality control.

Key Responsibilities

* Lead and manage daily bakery production for wholesale customers.
* Produce high-quality artisan breads (sourdough, rustic loaves, specialty and ethnic breads).
* Oversee pastry and laminated dough production (croissants, rolls, brioche); patisserie experience is a strong advantage.
* Plan and execute bulk production runs efficiently and consistently.
* Maintain strict quality standards across all products and batches.
* Ensure full compliance with HACCP, food safety, and hygiene standards.
* Train, supervise, and develop bakery staff and production assistants.
* Implement and improve SOPs for production, cleaning, and allergen control.
* Monitor ingredient usage, waste, and production efficiency.
* Propose and develop new product lines suitable for wholesale customers.
* Work closely with management on production planning, forecasting, and growth.

Who We're Looking For

* 8–12+ years' experience working in professional bakeries or artisan production environments.
* Proven experience in bread production at scale (retail or wholesale).
* Strong technical knowledge of dough fermentation, sourdough, proofing, and baking.
* Experience with pastry production; patisserie experience is a bonus.
* Comfortable managing people and leading by example on the production floor.
* Strong organisational skills and attention to detail.
* Solid understanding of HACCP and food safety compliance.
* Able to work early shifts and manage production schedules independently.
