Chef de Partie Job Description
Position Overview
The Chef de Partie (CDP) is responsible for running a specific section of the kitchen and ensuring food preparation meets the highest standards of quality, consistency, and presentation. Working closely with the Sous Chef and Head Chef, the CDP ensures smooth kitchen operations while supervising commis chefs and assisting in training junior staff.
Key Responsibilities
* Manage a designated kitchen section (grill, sauce, larder, pastry, etc.) during service.
* Prepare, cook, and present dishes according to the restaurant's standards and recipes.
* Supervise and guide junior chefs and commis staff, ensuring correct preparation techniques.
* Maintain stock control by monitoring portion sizes, minimizing waste, and reporting shortages.
* Ensure compliance with food hygiene, safety, and sanitation regulations at all times.
* Work collaboratively with other sections to ensure smooth service and timely delivery of dishes.
* Contribute to menu development, offering ideas for seasonal or innovative dishes.
* Check quality and freshness of ingredients and communicate with suppliers as needed.
* Maintain cleanliness and organization of the workstation and equipment.
Qualifications
* Proven experience as a Chef de Partie or in a similar role within a professional kitchen.
* Culinary qualification or relevant training is preferred.
* Strong knowledge of food safety, kitchen procedures, and cooking techniques.
* Ability to work under pressure in a fast-paced environment.
* Leadership skills with the ability to supervise and motivate a small team.
* Creativity and attention to detail in food presentation.
* Flexibility to work evenings, weekends, and holidays as required.
