Dromoland Castle is seeking an exceptional and experienced Assistant Food & Beverage Manager to support and lead the full operational performance of The Fig Tree Restaurant within the Golf & Wellness Country Club. This is a senior, hands-on leadership role requiring a dynamic hospitality professional with strong commercial awareness, operational expertise, and a passion for delivering world-class guest experiences. Operational Leadership: Oversee the daily end-to-end operations of The Fig Tree Restaurant Act as Manager-on-Duty, ensuring seamless service delivery at all times Maintain exceptional service standards aligned with luxury hospitality expectations Collaborate closely with kitchen and resort teams to ensure consistent quality and efficiency Team Leadership & Development: Lead, motivate, and develop a high-performing front-of-house team Drive a culture of professionalism, accountability, and guest-centric service Manage recruitment, training, performance reviews, and succession planning Lead by example through visible, hands-on floor presence Financial & Commercial Performance: Drive revenue growth through upselling, promotions, and service excellence Monitor KPIs including labour costs, payroll control, stock management, and gross margins Support budgeting, forecasting, and cost-control initiatives Ensure strong stock control procedures and minimise wastage Guest Experience Excellence: Deliver a consistently exceptional guest journey from arrival to departure Proactively resolve guest concerns with professionalism and discretion Build strong relationships with members, residents, and visitors Uphold the luxury brand standards associated with Dromoland Estate Compliance & Standards: Ensure full compliance with health, safety, and food hygiene regulations Maintain SOP implementation and continuous improvement practices Support cross-departmental coordination within the Golf & Wellness Country Club The ideal candidate will be: An experienced Assistant Restaurant Manager or Assistant F&B Manager in a high-end or luxury environment Commercially astute with strong financial understanding A confident leader capable of inspiring and managing large teams Highly organised, proactive, and solutions-focused Passionate about hospitality and delivering five-star guest service Benefits: Full on-the-job training Leisure Centre Membership Pension scheme after 6 months Wellness programme Competitive salary Discounted staff rates across Dromoland Castle and The INN at Dromoland Training Opportunities Work Authorisation: Applicants must have theunrestricted right to live and work in Ireland.
