MANAGEMENT
1. Assist in the recruitment, training, and development of high-quality personnel for the delicatessen area.
2. Maintain training records and ensure refresher training is provided as appropriate.
3. Manage rostering and general management of personnel to ensure adequate cover within budgetary provisions.
4. Oversee the overall performance of the delicatessen area.
5. Motivate the delicatessen team.
6. Ensure the team complies with hygiene and other area requirements.
FOOD MANAGEMENT
1. Ensure effective and compliant HACCP control systems are in place.
2. Implement and manage policies and procedures related to fresh food.
3. Ensure operations within the area adhere to relevant HACCP legislation.
4. Stay updated on HACCP and food hygiene requirements and communicate these to management and staff.
5. Maintain and update food safety policies.
6. Ensure staff comply with good food hygiene practices.
7. Regularly clean the deli area and equipment.
8. Provide and enforce the use of protective clothing.
9. Identify and monitor critical control points.
10. Implement systems for temperature checking and food hygiene.
11. Take corrective actions for critical control points.
12. Maintain waste management records.
13. Implement controls for handling fresh and red meats.
STOCK MANAGEMENT
1. Ensure effective stock control systems are in place, including stock rotation and discarding out-of-date stock.
2. Minimize wastage through effective stock management.
3. Implement and update food management and waste systems.
4. Identify and address stock leakage, minimizing losses due to wastage or damages.
GENERAL
* Undertake additional duties as assigned by the store manager.
FINANCE
1. Manage budgets for the delicatessen area.
2. Control overheads and maximize sales and profitability.
3. Promote sales and achieve sales targets set by the store manager.
4. Meet financial targets, including profit margins.
OPERATIONS
1. Ensure the delicatessen operates efficiently and standards are maintained and improved.
2. Plan for market changes and manage promotions.
3. Provide high levels of customer service and handle complaints appropriately.
4. Ensure food preparation and presentation meet hygiene and customer standards.
LEGISLATION
1. Ensure health and safety of personnel and compliance with consumer pricing regulations.
