We are Toons Bridge Dairy, a small wholly family owned award-winning artisan cheesemaking dairy outside Macroom producing high-quality cheeses with milk from our own and neighbouring farms with a hands-on approach, focusing on craftsmanship, consistency, and exceptional standards. As we continue to grow, we are seeking a hands on Dairy Manager to oversee daily operations, uphold the quality we are known for and lead a team. Ideal candidates will have food industry quality/hygiene experience, strong leadership and problem-solving skills and excellent attention to detail
About the Role
The Dairy Manager will work primarily in the packing room while overseeing the full dairy operation, which includes the cheesemaking room run by our Head Cheesemaker. This is a pivotal hands-on role requiring strong attention to detail, accuracy, and the ability to work efficiently in a fast-paced food production environment.
Key Responsibilities
* Ensure all products are produced safely, legally, and to required quality standards
* Maintain and implement HACCP systems and all associated documentation
* Ensure correct packing, labelling, and accurate customer order fulfilment
* Maintain product specifications and ensure raw material and finished product testing meet regulatory and company standards
* Liaise daily with the Head Cheesemaker to ensure smooth operations
* Work with food safety consultants and DAFM inspectors; implement corrective actions
* Manage stock control and ordering of packaging, hygiene supplies, etc.
* Support recruitment, onboarding, and training of staff
* Monitor staff performance, offering guidance, coaching, and motivation when needed
* Promote a safe, positive, and collaborative work environment
* Track KPIs including accurate, on-time delivery, customer satisfaction, happy team and waste reduction
* Work with Production, Owner, and Maintenance teams on quality issues, root-cause analysis and implement corrective/preventive actions
* Manage stock control and ordering of packaging, hygiene materials, and other supplies
* Ensure efficient systems, continuous improvement, and operational excellence across all processes
What We're Looking For
* Previous experience in a food industry quality or hygiene role
* HACCP training and strong knowledge of food safety & hygiene
* Food Science / Food Technology qualification (advantage but not essential with proven experience)
* Strong leadership, communication, and problem-solving skills
* Excellent organisational skills and attention to detail
* Strong leadership, people management, and team-motivating skills
* Self-starter with a proactive, hands-on approach
* Organised, proactive, and able to troubleshoot on the fly
* Own transport essential (no public transport available)
