We are now seeking a dedicated, organised, and motivated General Manager to lead our daily operations and continue driving The Buttery's reputation as one of the best brunch destinations in Ireland.
Role Overview
The General Manager is responsible for the full operational, financial, and cultural performance of the restaurant. This includes leadership of the kitchen and front-of-house teams, ensuring consistent service excellence, managing labour and costs, and driving sales growth. The GM must lead by example, embody The Buttery's brand values, and cultivate a positive work environment.
This is a daytime-hours role, ideal for a hospitality professional seeking work–life balance without sacrificing leadership challenge or career growth.
The GM will work a minimum of 40 hours per week, including weekend brunch service, with one Sunday off per month.
Key ResponsibilitiesLeadership & Team Culture
* Build, train, and lead a high-performing, motivated team.

Operational Management
* Oversee all daily restaurant operations with hands-on leadership.
* Manage opening & closing procedures, service flow, and guest satisfaction.
* Ensure all food, beverage, and service standards reflect The Buttery's brand.
* Guarantee compliance with Irish food safety, labour, and health regulations.
* Maintain cleanliness, organisation, and smooth coordination between FOH and BOH.
Sales Growth & Business Performance
* Drive sales through efficient service, upselling training, menu optimisation, and exceptional guest experience.
* Analyse daily and weekly sales to spot trends and opportunities.
* Implement strategies to increase average spend, table efficiency, and guest retention.
* Deliver labour cost management and scheduling aligned with Irish labour laws and targets.
* Collaborate with ownership on promotions, menu development, and corrective actions.
Bar & Beverage Leadership
* Maintain consistency and quality of all drinks served.
* Work closely with the bar team to improve recipes, techniques, and presentation.
* Manage beverage stock control, par levels, ordering, and waste reduction.
* Ensure drinks align with The Buttery brand colours, style, and guest expectations.
Guest Experience
* Lead by example in delivering warm, genuine hospitality.
* Resolve guest issues with care, professionalism, and urgency.
* Monitor guest feedback (in person and online) to maintain high satisfaction.
* Maintain an atmosphere that reflects The Buttery's welcoming, vibrant identity.
Financial & Administrative Duties
* Oversee labour scheduling within budget and legal compliance.
* Control food and beverage costs through ordering, waste tracking, and stock management.
* Manage petty cash, POS oversight, daily reporting, and compliance paperwork.
* Review performance metrics and implement improvements as needed.
Requirements
* Proven experience as a Restaurant Manager or Assistant GM in a high-volume setting.
* Strong leadership, communication, and people management skills.
* Passion for hospitality and delivering exceptional guest service.
* Ability to stay calm, organised, and upbeat during high-volume brunch service.
* Understanding of Irish labour laws, food safety standards, and cost controls.
* Experience with rostering, forecasting, and operational planning.
