Job Summary:The Restaurant & Food Outlet Manager is responsible for the successful operation of Gracys Restaurant, Cafe, and Food Truck at Westport Estate. This role leads a seasonal hospitality team, delivers high-quality guest experiences, and drives revenue growth particularly through events, functions, and peak seasonal trade.A key focus of the role is the development and delivery of structured annual training programs to ensure staff are well-prepared for seasonal demand, aligned with brand standards, and capable of delivering consistent service across all food outlets.Principle ResponsibilitiesOperations & LeadershipOversee daily operations of Gracys Restaurant, Cafe, and Food TrucksEnsure exceptional customer service and consistent brand standards across all outletsManage seasonal fluctuations in trade with effective staffing and rosteringMaintain compliance with food safety, WHS, and licensing requirementsMonitor stock control, ordering, and supplier relationshipsStaff Training & DevelopmentIn partnership with Learning & Development Manager:Design, implement, and review annual staff training plans aligned with seasonal business needsLead onboarding and pre-season training for new and returning staffTrain and coach supervisors and senior staff to support service standardsEnsure cross-training of staff across restaurant, cafe, and food truck operationsFoster a positive, professional, and team-focused workplace cultureFinancial & Commercial PerformanceManage labour and food costs to meet budget targetsMonitor sales performance and identify opportunities to increase revenueWork closely with management to forecast seasonal demand and plan resourcesAnalyse performance data and implement improvementsEvents & Revenue GrowthDevelop and execute strategies to increase revenue through events, functions, and estate experiencesPlan and deliver food and beverage operations for estate events, weddings, and special functionsCollaborate with marketing and estate teams to create attractive event offeringsIdentify new event concepts and seasonal promotions to drive visitationCustomer Experience & BrandDeliver a welcoming and memorable experience aligned with the Westport Estate brandHandle customer feedback professionally and proactivelyEnsure presentation standards of venues, menus, and service remain highThis job description is not intended to be either prescriptive or exhaustive, it is issued as a framework to outline main areas of responsibilities at the time of writing.Required QualificationsMinimum 3-5 years' experience in hospitality management (multi-outlet experience preferred)Familiarity with POS systems, rosters/scheduling software, and basic financial reporting including cash handling and reconciliations.Demonstrated experience managing seasonal hospitality teamsProven success in event-based revenue growthExperience in training, mentoring, and developing hospitality staffResponsible Service of Alcohol and Food Safety certificationHighly organised with strong planning and time-management skillsCommercially minded with a focus on revenue growth and cost controlWestport Estate is an equal opportunity employer.
