The multi-award winning Hotel Isaacs (Granmont Ltd) are currently seeking a talented Sous Chef to join the team.

Emerging from a brief hiatus in February 2024, the dedicated team at Greenes has been diligently creating a new space and mouthwatering menus. Step into our newly transformed space and be greeted by plush interiors, contemporary design. Greenes creates a tradition and modernity, reflected not only in our ambiance but also in our revamped menu. Drawing inspiration from Ireland's rich culinary heritage, Greenes menu is a celebration of locally sourced ingredients and producer-led dishes. From hearty classics to innovative creations, each offering pays homage to traditional Irish flavors while embracing a forward-thinking approach to eating out.

The Role

Reporting to the Head Chef, you will require strong leadership abilities in order to assist in efficiently running the kitchen when required in th absence of the Head Chef. YOU will be a professional, focused, enthusiastic person with a flare and passion for food presentation. We are looking for someone with experience working as a Sous Chef. The role is full time for 39 hours per week based here in Hotel Isaacs.

About The Role

Principal duties:

* Managing the day to day running of the kitchen in the absence of the Head Chef.

* To fully implement HACCP in the kitchen

* General cost and quality control for both incoming and outgoing goods.

* Menu planning, design and pricing of the same.

* Responsible for the purchase of all goods, ensuring that they meet the required standards.

* To ensure that goods are stored at the correct conditions

* To ensure that stock rotation is carried out correctly and documented on a daily basis and taken accurately.

* To ensure the proper training on all kitchen equipment and catering procedures to kitchen staff and kitchen porters

* To ensure that stock levels are accurate at the end of every month

* To ensure all kitchen equipment is well maintained

* To ensure that food served from the kitchen is of the required standard highlighted in the menu specification

* To carry out customer retention policy and communicate hotel services to staff.

* To wear clean, suitable uniform and name badge at all times

* To deal with guest complaints in a friendly and efficient manner ensuring guest satisfaction at all times.

* Upkeep of the equal opportunities policy to ensure that there is a neutral working environment

* To participate in any training and personnel exercises designed to improve standards and performance

* To ensure that standards in relation to GAP Analysis are implemented.

* To keep staff/work areas tidy and safe and report any hazard, accident, loss, or damage to management and observe all requirements under Health and Safety at Work Act.

* To prepare weekly rosters in the absence of the head chef and ensuring that all overtime is recorded and accurate.

* To fulfil your obligations under the Health and Safety Act and any revisions or additional legislation made thereto.

* To ensure that reasonable care is taken for the health and safety of yourself, other employees, guests and any other persons on the premises.

* To be aware of trained first-aid personnel on the premises and the location of first aid box.

* To observe all safety rules and procedures, including those laid down in the health and safety statement for your place of work.

* To participate in fire and accident drills as directed by the hotel safety officer and / or your head of department.

Essential skills and qualifications:

* Minimum five years of chef experience in fast-paced kitchens
* Gastronomy qualification (or equivalent)
* Fluent English
* Excellent communication skills
* Passion and creativity for menu design
* Team player
* Ability to work under pressure
