Head of Operations – Russells Seafood Bar

About the Role
Russells Seafood Bar is one of Doolin's most recommended hospitality destinations, known for quality food, warm service, and consistency. Over the past four years, we've built a strong reputation with both locals and visitors — and we're proud of the trust that comes with that.
We are now seeking a Head of Operations to work closely with the Director of Russells and take ownership of the day-to-day running of Russells Seafood Bar. This is a senior, hands-on role for an experienced hospitality professional who enjoys leading people, running a tight operation, and protecting the guest experience.

* Russells Takeaway (Fish Shop & Coffee Shop)
* The Rocket House at Doolin Pier

What the Role Involves -
Operational Leadership
* Take day-to-day operational responsibility for Russells Seafood Bar
* Ensure services run smoothly, efficiently, and to a consistently high standard
* Maintain and oversee all operational checklists, procedures, and standards
* Identify operational issues early and implement practical solutions
* Provide leadership and operational support across other Russells outlets when required
Team Leadership & Staffing
* Lead, support, and motivate the front-of-house team on a daily basis
* Manage staff rostering, ensuring strong coverage and labour efficiency
* Support recruitment, onboarding, and seasonal team expansion
* Train and develop team members in service standards, workflow, and practical skills
* Create a positive, respectful, and professional working environment
Guest Experience & Reputation
* Be a visible presence during service, leading by example on the floor
* Protect and enhance Russells' reputation for excellent customer service
* Ensure every guest experience reflects our values and standards
* Handle guest feedback, queries, and issues with professionalism and care
Administration & Communication
* Manage email enquiries and day-to-day communication
* Handle and coordinate group bookings with the kitchen and service teams
* Support the Director with operational reporting, scheduling, and organisation
