Delivering Expert Wine Service
* Bespoke wine pairings and guest engagement across all outlets.
* Upselling wines, champagnes, aperitifs, and digestifs to enhance revenue.
* Guest satisfaction through an elevated experience in line with luxury hotel standards.
Sales Strategy & Innovation
* Evaluating the wine list for balance, relevance, and alignment with culinary vision.
* Maintaining awareness of trends and collaborating with Chefs and F&B teams to create dynamic wine pairings.
* Ensuring pre-service areas meet high standards before service or functions.
Leadership & Team Development
* Leading, mentoring, and motivating sommeliers and service teams for excellent standards.
* Conducting performance reviews, assessments, and team training sessions.
* Fostering a culture focused on service excellence, product knowledge, and attention to detail.
Operational Excellence
* Cellar organization and adherence to SOPs regarding requisitions, procurement, stock control, and loss prevention.
* Compliance with health, hygiene, and safety regulations in beverage storage and service areas.
* Accurate reporting and documentation using systems like Procure Wizard.
