Job Overview
We are seeking a Food and Beverage Manager to lead our professional teams across Fota Island Resort. The successful candidate will be passionate about food and beverage, innovative, motivating, and energetic, and will manage all daily operations of the resort’s food & beverage outlets, including the bar, banqueting services, and dining rooms.
Responsibilities
Oversee daily operations of all food & beverage outlets across the resort, ensuring smooth and efficient service.
Coordinate closely with Head Chefs and kitchen teams to align service and culinary standards.
Lead, train, and motivate a large F&B team across multiple outlets.
Implement and monitor SOPs and service procedures, ensuring all performance appraisals and probation reviews are completed.
Ensure compliance with food safety, hygiene, and licensing regulations.
Complete rosters and manage labour forecasts, budgets, and food & beverage cost in line with budgets.
Generate new ideas for service and products to maintain a competitive edge and drive additional revenue.
Review written communication (daily/weekly BEOs) to determine staffing levels, room/station assignments, buffet decor, and enhancements.
Organize departmental meetings with F&B Supervisors to discuss forthcoming events and past week coverage.
Ensure service briefings cover core standards such as dress code, hygiene, and service procedure.
Qualifications
3rd level Hospitality Diploma or equivalent.
Previous experience in managing multiple outlets, including banqueting within a 5-star hotel or resort setting.
Excellent knowledge of Food & Beverage (including wine).
Excellent customer service and communication skills, with the ability to influence change.
Experience with KPIs, budgets, forecasting, and labour cost management.
Extensive experience in F&B staff training, grooming, customer service, and service etiquette.
Experience compiling rosters, training plans, basic payroll administration, table plans, menus, and ordering.
Strong leadership skills to effectively manage and motivate the team to achieve high performance and exceptional customer service.
Proactive, results-oriented approach with the ability to identify opportunities for improvement and implement effective solutions.
