Position Summary
The Head Baker is responsible for leading all aspects of bread production and baked goods operations. This includes managing the bakery team, overseeing daily production, ensuring product quality and consistency, developing new recipes, and maintaining high standards of food safety, efficiency, and craftsmanship. This is both a hands-on and leadership role.
Key Responsibilities
Production & Quality
* Lead daily production of all breads and baked goods, including mixing, fermentation, shaping, baking, and finishing
* Ensure consistent quality, flavour, texture, and appearance across all products
* Maintain and evolve our core product lineup while developing seasonal and specialty items
* Oversee proper use and care of starters, preferments, and fermentation schedules
Leadership & Team Management
* Train, mentor, and supervise bakers and bakery assistants
* Create production schedules and assign daily tasks
* Foster a positive, collaborative, and accountable kitchen culture
* Conduct performance feedback and support professional development
Operations & Inventory
* Manage ingredient ordering, inventory control, and waste reduction
* Ensure all equipment is properly maintained and report repair needs
* Optimize workflow and production efficiency without compromising quality
Food Safety & Compliance
* Maintain strict adherence to food safety, sanitation, and health regulations
* Ensure proper labelling, storage, and allergen controls
* Lead by example in cleanliness and organization
Collaboration & Growth
* Work with ownership and front-of-house teams on product planning and customer feedback
* Support special orders, wholesale production, and seasonal increases in demand
* Contribute ideas for growth, improvement, and innovation
Qualifications
* Minimum 3–5 years of professional baking experience, with at least 1–2 years in a leadership role
* Strong background in artisan bread production (sourdough, laminated doughs, enriched doughs, etc.)
* Deep understanding of fermentation, dough handling, and baking science
* Proven ability to lead, train, and motivate a team
* Excellent time management and organizational skills
* Ability to work early mornings, weekends, and holidays as required
Preferred Qualifications
* Formal culinary or baking education
* Experience with wholesale production
* Experience developing new recipes and menus
