We are currently seeking a talented and motivated Chef de Partie / Sous Chef to join our culinary team at the Glengarriff Park Hotel. Key Responsibilities
Support the Head Chef in the day‑to‑day management of the kitchen.
Supervise and coordinate kitchen staff to ensure smooth, efficient service.
Maintain high standards of quality, consistency, and presentation at all times.
Food Preparation & Service
Oversee the preparation and plating of dishes according to established recipes and standards.
Monitor food quality and consistency throughout service.
Team Development & Training
Assist in training and mentoring kitchen staff, helping to develop skills across the team.
Provide ongoing performance feedback and support team development.
Health & Safety Compliance
Ensure full adherence to hygiene, food safety, and HACCP standards.
Promote a clean, safe, and well‑organised kitchen environment.
Quality Assurance
Conduct regular checks on food quality, taste, temperature, and presentation.
Quickly address and resolve any issues to maintain guest satisfaction.
Operational Support
Help manage staff schedules and ensure adequate cover during busy periods.
Take full responsibility for kitchen operations in the Head Chef's absence.
What We're Looking For
Experience as a Sous Chef or strong Chef de Partie in a high‑volume kitchen.
Excellent leadership and communication skills.
Deep understanding of food safety and kitchen best practices.
Calm, efficient, and organised under pressure.
Passion for delivering exceptional food and a strong team ethic.
